This easy overnight oats recipe delivers all the cozy flavors of carrot cake in a creamy, wholesome breakfast. Quick to prep, great for grab-and-go mornings.

  • 1 cup rolled oats
  • 1 cup milk of choice ((almond, oat, dairy, etc.))
  • 1/2 cup Greek yogurt (or dairy-free alternative)
  • 1/4 cup maple syrup

Flavorings & Add-ins

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup grated carrots
  • 1/4 cup chopped walnuts
  • 2 tbsp raisins (optional but recommended)

Instructions

  1. Add oats and milk to a mason jar or bowl using a 1:1 ratio.
  2. Stir in yogurt, maple syrup, vanilla extract, cinnamon, and nutmeg.
  3. Fold in grated carrots, chopped walnuts, and raisins.
  4. Mix well, cover, and refrigerate overnight (at least 8 hours).
  5. In the morning, stir and enjoy as-is or with a splash more milk if desired.

Notes

You can make several jars in advance to last through the week. Swap raisins for dried cranberries or walnuts for pecans for variations.
