For the roast:

  • 34 lbs chuck roast

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • 1 tbsp Worcestershire sauce

For the vegetables:

  • 4 large carrots, cut into chunks

  • 3 medium potatoes, cut into chunks

  • 1 onion, sliced

  • 3 cloves garlic, minced

For the broth:

  • 2 cups beef broth

  • 1 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 bay leaf

Instructions

1️⃣ Prepare the roast: Pat the chuck roast dry with paper towels. Season it evenly with salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub Worcestershire sauce all over for extra flavor.

2️⃣ Sear for flavor: Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast for 3–4 minutes per side until it forms a deep golden-brown crust. This locks in the juices and enhances flavor.

3️⃣ Assemble in the slow cooker: Place the carrots, potatoes, onions, and minced garlic in the bottom of a slow cooker. Lay the seared chuck roast on top.

4️⃣ Make the broth: In a bowl, mix beef broth, tomato paste, thyme, rosemary, and the bay leaf. Pour this mixture over the roast and vegetables.

5️⃣ Slow cook to perfection: Cover and cook on LOW for 8–10 hours or on HIGH for 4–5 hours, until the meat is fork-tender and easily pulls apart.

6️⃣ Shred and serve: Remove the bay leaf. Use two forks to shred the meat slightly. Serve the juicy roast with the cooked vegetables and drizzle some of the flavorful broth over the top.
